@Moviuro Je ne suis pas sûr que cela réponde à la question posée. Et je ne pense pas qu'il y ai de solution. Les noms générés par grub-mkconfig ne sont pas customisable que je sache.
Après personnellement je préfère ajouter les entrées à la main via un fichier custom, donc j'ai une maitrise totale...
Cette variable n'est que pour la distribution courante et non pour ce qui est détecté. Je suis sérieux quand je dis qu'il n'y a pas de solution à part faire les entrées à la main

Sinon, regarde le fichier /etc/lsb-release de toutes tes distributions. De mémoire, grub lit ces fichiers pour auto-générer la conf.

Si tu veux plus de liberté dans la gestion de ton bootloader je te conseille d'utiliser syslinux. Tu pourras éditer simplement le nom de ta distribution préférée dans syslinux.cfg
Avec GRUB tu peux très bien faire la même chose avec un fichier custom. Syslinux possède pas mal de limitation et donc il ne peut pas convenir à tout le monde
